(1) Process Flow: Raw Material → Crushing → Brick Forming → Desalination → Feed Impregnation → Drying → Continuous Feeding and Drying → Licorice Powder → Packaging → Storage (2) Process Specification: (1) Raw Material: Use Yellow Sweet Orange and other citrus varieties, peels are stripped from the outer skin and cut into irregular sheets, commonly known as "money skin." For every 100 kg of peel, add 50 kg of salt and 0.5 kg of alum. Soak the mixture for 48 hours, then immediately immerse in boiling water for 2 minutes to set the texture. (2) Blanks Preparation: Wash the orange peels thoroughly to remove excess moisture. Then, soak them in a brine solution made with 50% salt by weight of the fruit. The concentration is typically around 30% brine, depending on the desired flavor profile. (3) Desalting: Soak the prepared blanks in clean water, changing the water every 4–5 hours. After approximately 24–48 hours, the salt content will be significantly reduced, making the peels ready for the next stage. (4) Liquid Preparation: Combine 6 kg of licorice root with 30 kg of water and boil it down to 25 kg of licorice extract. Add 30 kg of white sugar and 100–150 g of sodium benzoate to preserve the mixture and enhance flavor. This forms the original juice used in impregnation. (5) Impregnation and Feeding: Boil the licorice juice, then add the desalted peels. Let the mixture bubble and simmer for 2 hours. After that, drain the peels and reapply the original juice before drying. Repeat this process several times to ensure even absorption and consistent flavor. (6) Adding Licorice Powder: Once the peels are fully dried, mix in 1% of the total weight of licorice powder. This ensures the powder adheres evenly to each piece of citrus peel, enhancing both flavor and appearance. (7) Packaging: After weighing, the finished product is immediately packed in small plastic bags of 25g, followed by larger sizes such as 200g, 250g, 500g, or 1000g. These are then placed into corrugated boxes, each containing 10–15kg. On each package, clearly indicate the product name, net weight, manufacturer’s name, production site, and batch number for quality control and traceability. This detailed process ensures high-quality, flavorful, and well-preserved citrus peels infused with licorice, suitable for both domestic and commercial use.
